Active Ingredients

Crispy Cabbage

  • 1/4 head green cabbage, cut into 1/2- inch pieces cut into 1/2 inch pieces
  • 2 teaspoons olive oil
  • sea salt and ground black pepper, to taste
  • optional flavorings: Old Bay, celery salt, caraway seeds, nigella seeds, za’atar, whatever you like!

Chowder

  • 1 tablespoon olive oil
  • 1 big yellow onion, little dice
  • 1 leek, little dice ( white and light green part just)
  • 4 cloves garlic, minced
  • 1 tablespoon fresh thyme leaves, minced
  • 2 parsnips, peeled and sliced
  • 1 little celery root, peeled and sliced
  • 3 cups of little cauliflower florets
  • 1 1/2 tablespoons rough mustard
  • sea salt and ground black pepper, to taste
  • 2 teaspoons dietary yeast
  • 1 teaspoon Old Bay Flavoring
  • 3 tablespoons lemon juice
  • 3 1/2 cups veggie stock

Guidelines

  • Preheat the oven to 400 degrees F. Line a baking sheet with parchment paper.
  • Make the crispy cabbage. Location the sliced up cabbage onto the parchment lined baking sheet. Put the 2 teaspoons of olive oil over leading, season with salt and pepper and include any spices you like. Toss gently to integrate and spread out cabbage out equally on the baking sheet. Move the sheet into the oven and roast the cabbage for 13-17 minutes, or up until browned on the edges and crispy in parts. You’ll need to turn the cabbage around a couple of times while it’s roasting. Keep it warm.
  • Make the chowder. Heat the olive oil in a big, heavy soup pot over medium heat. Include the diced onions to the pot and sauté up until soft and clear, about 5 minutes. Include the leeks and continue to sauté up until the leeks are soft, about 5 minutes more. Include the minced garlic and thyme to the pot and cook up until aromatic, about 1 minute, stirring continuously.
  • Include the sliced parsnips, celery root, and cauliflower florets to the pot and stir to coat in the oil. Include the rough mustard, salt + pepper to taste, and Old Bay. Stir to coat all the veggies in spice. Include the lmeon juice to the pot and stir. Include the veggie stock to the pot, stir once again, cover and give a boil. As soon as boiling, eliminate the cover and lower heat to simmer. Let the chowder cook and bubble up until the parsnips and celery root pieces hurt, about 15-20 minutes.
  • Thoroughly ladle half of the chowder into an upright mixer and thoroughly purée up until smooth. Put the puréed part of chowder back into the soup pot and bring it back to a boil. Inspect the chowder for flavoring, change if essential, and serve hot with some crispy cabbage on top
