Directions

  • Preheat the oven to 350 ° F. Line a big baking sheet with parchment paper and reserved.
  • Location the dates in a little bowl and cover them with boiling water. Let the dates soak and soften for 5 entire minutes.
  • In a little bowl, strongly stir together the ground flaxseed and water. Set mix aside for 5 minutes to thicken/gel somewhat.
  • Once the dates are softened, drain completely and move them to the bowl of a food mill, fitted with the “S” blade. Include the flaxseed mix, coconut oil, almond butter, molasses, vanilla, and apple cider vinegar. Run the food mill on high up until you have a smooth paste, stopping at one indicate scrape down the sides of the bowl with a spatula.

Notes

  • This cookie dough will appear impossibly sticky/too damp when you’re attempting to form it. I suggest gently oiling your hands to roll and flatten the parts of dough.

These look simply magnificent. I reside in Playa del Carmen back the Starbucks back house in Canada constantly had these charming ginger molasses cookies and they were my favorite.

Concern, here it is practically difficult to discover practically flour and when you do it’s the rate of gold. If I am not particular for it being gluten-free would I simply replace the exact same quantity of flour for almond flour? Or what would your suggestion be?

Thanks a lot beforehand and thanks for constantly publishing such charming & motivating posts. Reply

    • Laura

      Hello Heather,
Thanks a lot for this remark! I evaluated this dish lots of times with the particular goal to make it grain-free and short on refined sugar, so I can not actually speak with replacements here. I believe the nature of this cookie may be picky to make replacements with. My truthful suggestion would be to discover a vegan ginger molasses dish from another website that was established in a more conventional design (with all function flour, potentially sugar and so on)! Minimalist Baker and Oh She Shines are constantly sure things:-RRB-

What if you can’t have nuts is it ok to utilize sunflower seed butter and a various flour then almond? Reply

    • Laura

      Hello Sonya,
For a nut-free variation, I will comprise a sunflower seed “flour” in my food mill and usage sunflower seed butter in these cookies. One preventative measure: when sunflower seeds and baking soda integrate, it will turn your baked products green. I have actually not attempted these with wild rice flour or any other gluten-free (however grain-containing) flour regrettably so can not speak with reliable replacements.

What’s the very best method to keep these cookies? Do they keep well? Reply

    • Laura

      Hello Judi,
These cookies keep best when they are loosely covered or covered either in aluminum foil or beeswax wrap. They simply require a little bit of air circulation due to the fact that they can get extremely soft if sealed in an airtight container. As soon as covered, they keep well for approximately 5 days.
